Easy and Bright Holiday Recipes
During the holiday season, many of us rely on family recipes that have been handed down from generation to generation. We love to have family and friends over for the holidays. My wife, Amanda, prepares many wonderful dishes from appetizers to entrees to desserts. Some take a long time to make. Others are simple and fast. We’ll share a few of those with you:
A Rack of Lamb for Two (Amanda Wilson)
2 tbs. coarsely ground cornmeal
1 tsp. minced fresh rosemary
1 clove garlic, minced
1/2 tsp. coarse (kosher) salt
pepper
1 rack of lamb (8 or 9 chops) cut in half (frenched)
2 tbs. Dijon mustard
Combine cornmeal, rosemary, garlic, salt & pepper. Coat rack fat side with mustard and top with above mixture.
Bake at 400 degrees for 25 minutes for medium rare.
Mother’s Cheese Wafers (Frances Mills)
1/2 lb. Sharp Chedder cheese - grated
1 stick butter, melted
1 1/2 cups plain flour
Cayenne pepper to taste
1/2 tsp. salt
Pecan halves
Grate cheese and combine with remaining ingredients. Roll into logs. Refrigerate overnight. Slice into wafers and top with pecan half. Bake at 350 degrees till brown. This doubles well.
Ruth’s Pecan Pie (Ruth Wilson)
1 9” pie shell (Deep dish)
1/3 cup Crisco
1/2 cup brown sugar
1/2 cup Carnation condensed Milk
1 cup chopped pecans
1/4 tsp. salt
1 cup Karo Syrup, light or dark
1/2 tsp. vanilla
3 beaten eggs
Cream Crisco and sugar. Add chopped nuts, 3 beaten eggs, syrup, salt, and milk. Mix. Pour into uncooked pastry shell (deep dish). Bake 10 minutes at 425 degrees and then bake 30 minutes at 325 degrees.
